In the heart of the Chianti Classico, there’s a place where history intertwines with the land, creating an agricultural reality that blends the wisdom of the past with the challenges of the future: it’s the story of Giacomo Grassi and his company, a journey rooted in an ancient family tradition, projected towards modern and sustainable agriculture.
It all begins with “Le Case,” the original estate managed by Giacomo’s parents, Rolando and Elena, under a sharecropping system that once defined rural life in Tuscany. Positioned about 450 meters above sea level, the olive grove already produced high-quality oil, free of chemicals and cultivated naturally and attentively, maintaining a deep respect for the earth.

But in 1987, the story takes a new direction. After the devastating frost of 1985, Rolando decides to replant the olive grove, choosing a row arrangement and unique varieties. This vision, considered daring at the time, marked the start of a path to enhance local cultivars. The names of Olinto Frantoio and Olinto Leccino, the company’s flagship oils, pay homage to Giacomo’s grandfather, and coming directly from that first olive grove, they testify to a strong bond with family memory and the land that raised him.
The company further evolves with Giacomo’s entry, who, over time, manages to unite three adjoining properties with those of his parents, expanding the cultivated area to around 85 hectares. With the help of his sister Debora, Giacomo revives the old olive groves and vineyards, transforming them into specialized crops and focusing on native varieties, both for olives and vines.
This attention to biodiversity, coupled with conscious land management, has made the “Giacomo Grassi” company a reference point for quality and respect for nature.
Another turning point came in 1996.
Giacomo decides to focus on producing monovarietal oils, embarking on a long journey of study and analysis to understand the characteristics of each variety. Eight years of research culminated in 2004 with the first bottling of oils obtained from selected olives. Since then, the production has expanded to include 16 monovarietal varieties and four blends. The commitment to quality and the search for new varieties continues to this day, with an approach that combines tradition and experimentation.
Another crucial moment for the company came in 2006, when Giacomo met Fiammetta Nizzi Grifi, an agronomist and his life partner. Together, they pursued an innovative vision for production, delving into the sensory analysis of oils and refining agricultural techniques, all while maintaining a focus on sustainability. Their philosophy is based on the belief that soil and plant management deeply influence the sensory characteristics of the oil, so they are committed to respecting local ecosystems, avoiding the use of chemicals.

In 2007, the business further expanded with the founding of Caliptra & Mignola G.N.G. srl, in collaboration with Fiammetta’s children, Vieri and Lapo. This new company is dedicated to the logistics and marketing of oil, providing valuable support for production.
2009 brought both sorrow and hope: in May, Rolando, a pillar of the family and a mentor to Giacomo, passed away, while in December, little Rolando Pietro, nicknamed Piri, was born. This new generation represents an ideal continuity with the past, confirming the family’s commitment to a legacy rooted in love for the land and a passion for quality.
Giacomo Grassi’s philosophy is based on a deep respect for nature, which he considers both a gift and an opportunity. In an increasingly fast-paced and globalized world, the choice to cultivate ancient varieties and rediscover local traditions becomes an act of cultural resistance. Behind every bottle of oil, vinsanto, or grappa lies the care and dedication of someone who has chosen to preserve the authentic flavors of the region without abandoning change and continuous exploration.

Today, Giacomo Grassi’s company remains a beacon in the landscape of high-quality olive cultivation, recognized both nationally and internationally. Every olive harvested tells a story of ancient gestures and cutting-edge techniques, of skilled hands and constant research.
Giacomo and his family’s journey has never stopped; it always looks forward, searching for new horizons to explore, with the certainty that nature and agriculture are privileges to be fully experienced, day after day.
